#Project365 9/52

Busy week for us, we had our Grandson from Tuesday afternoon and then overnight. He run us ragged!!! I don’t know where he gets his energy from and he had found his shouty voice too! He doesn’t have much of a vocabulary at the moment even though he’s just over two.  Their Doctor is not too concerned at the moment but is putting him forward for assesment as his Daddy (our son) was also slow speaking.

We went to the cinema on Wednesday to see Die Hard 5 – full of action and you have to suspend your brain somewhat!! Still it was good entertainment.

Also on Wednesday I recieved a lovely hamper of Italian goodies from a PR company in exchange for a blog post for Thomson Al Fresco. The post is in draft mode at the moment!

Thursday saw the arrival of £30 Sainsbury Vouchers from Valued Opinions for completing surveys. Don’t get your hopes up on earning mega bucks…that was a YEAR’s worth!!

On Friday Hubby was getting really anxious about his operation for a lump by his ear.  He’s had the lump for a few years and mentioned it to the doctor last year. He was referred to a Consultant who said it was a Pleomorphic Adenoma – a benign tumour on a salivary gland.  He had the op Friday afternoon and was given the ok to come home Saturday afternoon. The wound is not a pretty sight!!

On Saturday I started to put together my recipe for the Thomson’s post and made a lovely pasta sauce with tomato, bacon and mushrooms, served with garlic & basil pasta and crusty bread to soak up the sauce..mmm..

RECIPE: Creamy Ham and Mushroom pasta (172/366)

As we are going food shopping tomorrow it seemed a good idea to clear the fridge of nearly out of date products.

This is what I found, about 50g of ham, about 100g of mushrooms, half a pot of Creme Fraiche (300ml pot), a small piece of cheese and half a glass of white wine.  There was also one large bread roll in the bread bin. So I decided to cobble together this recipe and make garlic bread with the roll. (crush garlic clove, add a little parsley, butter and mash together, spread over slices of bread/roll and grill until lightly brown.)

Creamy Ham and Mushroom pasta

Ingredients (serves 2)

  • 50g cooked ham – cut into strips
  • 100g mushrooms – sliced
  • 150ml Creme Fraiche
  • 1 clove garlic – crushed
  • half a glass white wine
  • 25g cheese – grated
  • salt and pepper to taste.
  • 125g any pasta.

  • Put pasta on to cook as per packet instructions.
  • Heat a little olive oil in a small pan, saute mushrooms until soft.
  • Add garlic and fry for one minute.
  • Add wine and bring to boil.
  • Add ham and creme fraiche and stir.
  • heat gently until warmed through.
  • add salt and pepper to taste
  • The pasta should now be cooked, drain and return to pan.
  • Pour the sauce into the pasta and stir to coat.
  • Divide between 2 dishes and sprinkle with cheese.

Week 6 #Project366

Week 6 –

37/366 First up my gorgeous grandson Ashley. Snapped by his daddy.

38/366 Creamy Leek and Bacon Pasta – for the recipe click here

39/366 Hubby’s Birthday cards

40/366 The electricmen up the pole – They turned off our power from 9am to 3pm to change 4 cables in our lane to one.

41/366 We had some carpet laid in 2 bedrooms today. When we took up the old carpet in the back bedroom we saw this that hubby must have drawn on the floor before the original carpet was laid 17 years ago. It’s a cartoon of our two sons – oh one is not called Leaf… it was just a nickname at the time!

42/366 Sign from the side of our local pub. We live in a rural area and it always amuses me that the sign is in English, German and French but not in Welsh (we are in Wales!). But then again they wouldn’t have room to put ystafelloedd!

43/366 The village has a reen that is currently running quite freely. If you’re not sure what a reen is click here.

RECIPE: Creamy Leek and Bacon Pasta

Ooh look the first recipe for my blog!

I had some leeks and bacon in the fridge and wanted to throw something together quickly for tea. I recently bought some Very Lazy garlic so I used a teaspoon of that instead of a fresh clove. The bacon I used was the cheap bacon offcuts you can find in most supermarkets. It’s usually a mix of smoked and unsmoked bacon.  I forgot to photograph it when I served it but I had some left over so this is a picture of my hubbys lunch box!

Creamy Leek and Bacon Pasta

Plemty for 2 people!

4oz Bacon cut into strips – smoked is better.

1 leek trimmed and sliced finely

1 clove of garlic – crushed

small bunch of parsley chopped – reserve a little to sprinkle over when serving.

5 fluid oz of double cream or Elmlea

1 oz cheddar or parmesan cheese

Black pepper to taste

4-5 ozs Pasta  – any type – your choice! (any that cooks in 10 mins or so)

Bring water to boil in saucepan and put pasta in to cook.

Fry bacon in a little oil until golden

Add leeks and garlic and mix with the bacon.

Add a couple of tablespoons of the cooking water from the pasta.

Simmer gently for 5 mins until the leeks are soft.

Add the cream, cheese, parsley and black pepper to taste. Stir and taste and adjust seasoning.

heat GENTLY for a minute or so to warm through but do not boil as it spoils the taste.

Drain the pasta.

You now have 2 choices –

1. Mix the creamy leeks and bacon with the pasta and serve sprinkled with parsley.

2. Divide the pasta between two dishes and pour over the creamy mix. Sprinkle with parsley.
